Cucumber Tomato Mozzarella Salad

I am using an overabundance of garden-fresh produce in my CucumberTomato Mozzarella Salad. It's fun to make a salad with your own garden-fresh veggies. It's a combination of Cucumber & tomato. The star of this salad is Mozzarella Cheese.

Serves 4 person
Ingredients:
For Dressing:
- 1 tsp Maple syrup
- 2 tsp Soya sauce
- ½ tsp Rice Vinegar
- ½ tsp Sesame oil
- 2 Garlic cloves (minced)
- ½ inch Ginger(minced)
For Salad
- 1 small cucumber
- 1 Avocado
- 1 ½ cup cherry tomatoes
- 1 big red onion
- 1 container Mozzarella Cheese
- Basil leaves
Instructions:
Dressing Preparation:
Step 01- Stir dressing
In a bowl combine all the dressing ingredients & sit until all are corporated. Set aside.
Salad Preparation:
Step02-Cutting
Halve Cherry Tomatoes & Mozzarella Cheese. Now thinly sliced red onion & basil leaves.
Cut Cucumber lengthwise. Remove the softcore to avoid a soggy salad.Cut the softcore & dice it.
remove the outer layer & seed from the avocado & cube.
Put all veggies except avocado in a kitchen towel, press lightly to remove excess water.
In a large enough mixing bowl put cucumber, tomatoes, avocado & red onion, mix them up using your hands or fork, or spatula. Once they're combined, mix in Mozzarella cheese.
Step 03-Mixing
Drizzle with dressing and combine the salad well to ensure an even coating. Season over extra lime at this point too if wanted.
Sprinkle with basil leaves & serve.
- Salad ingredients are customized. You can use the recipes' ingredients or add more like radish, carrots, lettuce, apple, olives.
- For a dairy-free salad skip Mozzarella cheese.
- Crumbled feta cheese can be used.
- For a whole meal add tuna fish or salmon fillet or chicken steak in a salad. I think hard-boiled eggs topped with freshly cracked black pepper tastes better.
- For a simple salad dressing only use vinegar & some honey.

Store it in a jar for upto 3 months.
Salad:
Leftover cucumber tomato mozzarella salad can be stored in the fridge for 12 hours to 1 day. To make ahead of time, you can prep the ingredients and assemble them in a bowl covered with a kitchen towel up to 24 hours in advance. Put the dressing just before serving, otherwise, it will become quite soggy.
