This recipe with lamb, lettuce, tomatoes, red onions, herbs, and spices makes for a simple, homemade version of Turkish kebabs. They taste just as delicious as the genuine thing when warmed up with some hot and garlic sauce!

It is common as a street food in Turkey for Turks but can also be found in sit-down restaurants. Even it is very famous in Europe specially in Germany. In Berlin, there is a famous Turkish Doner shop (Mustafa's Gemüse Kebap) where people wait for hours to have a Durum or Doner Kebab.


Dürüm



Ingredients

600 grams of lamb (shoulder or leg)
2 teaspoons of paprika
2 teaspoons ground cumin seeds
1 teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon fine salt
6 large dürüm flatbreads
garlic sauce
¼ iceberg lettuce
4 tomatoes
1 red onion


Preparation – 15 minutes + waiting time

Let's start the preparation of the doner kebab meat.

Remove excess fat and sinew from the lamb, then cut the lamb into thin strips and add the paprika, cumin, garlic powder, oregano and salt.

Mix and marinate well the meat for at least half an hour. It's not good to leave the meat to marinade overnight, the meat will be even more flavourful.

Make the garlic sauce so that the flavours have time to develop (you can also use ready-made garlic sauce).

Finishing the Turkish dürüm – 30 minutes

After washing, cut the tomatoes in half, and remove the cores, slice the tomatoes. Cut iceberg lettuce into thin ribbons. Cut the red onion into half-moons after peeling it.

Drizzle a flatbread made of dürüm with garlic sauce. A strip of meat should be placed in the centre; the bottom end should remain vacant. Arrange the red onion, tomato, and lettuce on top of the meat.

You can also add some chilli sauce or chopped Turkish chilli if you'd like. Tightly roll the tortilla, folding the bottom up.

If you don't have panini press don't worry. It's possible to use griddle pan instead of panini press. When the grill pattern is visible on both sides of the wrapped dürüm, place it in the panini press and grill it for a few minutes.

Serve the lower portion right away after rolling it in aluminium foil. Continue with the leftover dürüm wraps. Ready your food to enjoy.
