How to make Shrimp Ceviche

Serves 4 person
- Kosher salt
- 700-gram shrimp, peeled and deveined
- 4 tsp lemon juice
- 2 jalapeƱos
- 1 small size cucumber
- 2 red tomatoes
- 1 large red onion
- freshly chopped cilantro
- ¼ cup mayonnaise
- 2 tbsp. hot sauce
- 8 corn tostadas
- 1 avocado
Step 01- Shrimp preparation:
In a large pan boil enough water. Add some kosher salt. Put shrimp in boiling water & stir until shrimp are pink & cooked. It takes almost 3-5 minutes. Drain With a strainer, strain all shrimp from water. Transfer in a kitchen towel or paper to soak excess water. Let them cool down.
Step02-Cutting:
Finely chop cucumber, onion, tomatoes, jalapeno. Put in a bowl.
Step 03-Mixing
Mix boiled shrimp, veggies, hot sauce, mayonnaise, lemon juice & marinate for 30 minutes in the fridge.
Step 04-Assembling:
Assemble ceviche, avocado, tostadas & mayonnaise, hot sauce if needed.
Step05-Serving:
Top each tostada with ceviche & avocado slice. Sprinkle some fresh coriander & lemon juice.

Tips & Tricks:
- Try to use fresh shrimp.
- I am using bite-size shrimp. If your using large size then cut them into Pisces.
- For different tastes shallow fry shrimp. Add some salt, ground black pepper & lime juice & marinate for 10 minutes. Shrimps are ready to fry.
- Avoid the core of cucumber & tomatoes otherwise, it will soggy ceviche.
- For variations don’t mix mayonnaise & sauce with veggies. Mix them separately. Spread the sauce mixture in tostadas then add ceviche.
Storage Tips:
- Leftover shrimp ceviche will stay fresh up to 10-12hiurs in the fridge.
- It`s a frozen-friendly recipe. To make ahead of time cut veggies & store them separately in an airtight container or Ziploc bag. Boil shrimp, stain excess water totally & store. Defrost every item at least 6-8 hours before serving. Mix sauce & mayonnaise. Serve with tostadas.
