Fluffy Pancakes


No, fail weekend pancake recipe!!!

Every single busy day starts with pancakes… and ends with leftover pancakes from the morning. They’re perfectly soft and super fluffy… each melts in your mouth… you’ll be reaching for more than one. Stack. Possibly.

Ingredients

  • 2 cups (260g) all-purpose flour
  • 4 tsp (52g) sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 1/2 cups (360ml) milk
  • 4 tsp (56g) butter, melted and slightly cooled at room temperature
  • 2 tsp vanilla extract

Instructions

  • In a large mixing bowl combine the flour, sugar, baking powder, and salt properly using your hands.
  • In a  small bowl, crack the egg. Add milk, butter, and vanilla extract. Stir them together.
  • Add the wet ingredients to the dry ingredients and gently mix them together until well combined, but still a little lumpy. Not over mix them or they could end up less fluffy and tough. The batter should be thick and easily pourable.
  • Set the batter aside to rest for 5-10 minutes, even you can cover the pancake mixture bowl with a kitchen towel or foiling paper. Any lumps start to soften as the moisture soaks in. Gently stir again.
  • Preheat a griddle or non-stick pan over medium-low heat and melt a little butter to grease it. Place batter onto the pan using a spoon or measuring cup and let it spread out into a round pancake. I used about a half cup of batter per pancake.
  • Allow to cook until bubbles come out on the surface and the edges are set, then flip and cook until golden.
  • Continue cooking with the remaining batter.
  • Serve warm & fluffy pancakes with maple syrup or honey or your choice of toppings.
Quick Breakfast Recipes:
Some tricks & tactics for super fluffy Pancakes:
  • Don’t over mix: Be careful not to over mix your pancake batter so that you don’t get tough, dense pancakes. Lumps are ok.
  • Use a flat cooking surface: For a nice texture pancake, cook on a flat surface. A griddle is preferable.
  • Make smaller pancakes: Don’t make your pancakes extra-large, or they’ll be difficult to flip.
  • When to flip a pancake: Your pancakes are ready to be flipped when you see bubbles coming through the surface and the edges are set.

Storage tips:
Frozen Pancakes: These pancakes do wonderfully when frozen and reheated!
You have 2 options:
  • First, You can add parchment paper between the pancakes when you freeze them so they don’t stick to each other.
  • Second, you can set the pancakes out individually onto a parchment-lined baking sheet and freeze them that way. Once frozen, put them all into an airtight container or bag
  • Reheat: To reheat them, microwave pancakes for about 20 seconds. These reheat beautifully.
