Easy chicken skewers

PREP TIME: 3o minutes

COOK TIME:10 minutes

TOTAL TIME:40minutes

SERVES:5persons

Ingredients:

  • 3 medium cloves garlic finely minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon smoked paprika
  • 2 tablespoons brown sugar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons finely minced fresh ginger
  • 3 pounds chicken

Instructions:

  • Cut chicken breasts into 1 ½  inch srtips. Set aside.
  • In a mixing bowl combine all marinade ingredients & stir to combine. Mix until fully combined.
  • Add chicken in the bowl. Mix the chicken to evenly coat with marinade.
  • Cover the bowl with foil paper or kitchen towel, place in the fridge for  at least 30 minutes and up to overnight.

  • After marination, thread chicken in the skewers.

  • Heat a grill pan or nonstick frypan to high-medium heat. Spray cooking oil.
  • Place skewers on the grill and cook. Cook each quarter for 3-4 minutes. Almost 10-12 minutes to cook chicken properly.
  • During grilling time brush chicken with remaining marinade sauce.
  • Remove chicken skewers from grill & rest for 2-3 minutes.

  • Drizzle with sesame seeds & serve Chicken Skewers.

Notes:

  • I am using boneless skinless chicken breasts. Chicken thighs can be used instead of chicken breasts.
  • If you are using wooden skewers, then soak the skewers for 30 minutes before cooking. It will prevent skewers from burning.
  • Bush chicken pieces with marinated sauce or oil. Not the grill pan.
  • Vegetables like bell pepper, onion, zucchini, and carrots can be used with chicken.

Storage tips:

  • Leftovers will remain fresh in an airtight container for up to 6 hours in the fridge.
  • It's a freezer friendly recipe. Store marinated chicken in a ziploc bag or container  in the refrigerator for up to 6 months.
  • Reheat: Remove stored chicken from fridge ,rest for a while. Thread into skewers & cook.
