One Pot Pasta

In Busy weeknights or family gathering , nothing beats a homemade one-pot pasta as you cook the pasta right in the sauce. There is only one pot to clean  and the stock used in cooking the pasta adds saucy flavors to the dish.

Ingredients:

  • 8 ounces spaghetti
  • 1 pint grape or cherry tomatoes (halved)
  • 1 cup baby spinach leaves 
  • 1 cup onion finely sliced
  • ¼ cup fresh basil leaves roughly chopped
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1/8 teaspoon crushed red pepper 
  • ½ teaspoon pepper
  • 4 cups chicken broth or vegetable stock
  • ½ cup parmesan cheese grated (optional)

Instructions:

  • In a large pot, put the borth & bring to a boil. 
  • Add pasta, tomatoes, spinach, onion, basil leaves, olive oil, crushed red pepper, salt, pepper in the boiling stock.

  • Turn down heat to medium-low and cook for 10-12 minutes, until liquid has reduced to a sauce and noodles are all dente.
  • If you would like a creamier sauce, take out ½  cup stock mix with 2 tablespoons of cornstarch. Whisk until there are no more lumps and then return mixture to pasta.
  • Take off heat and stir in parmesan cheese & basil leaves.
  • This is best when served warm. Enjoy!

Some tricks & tactics for Easy One pot pasta:

  • Be careful choosing the skillet or pot for this recipe make sure that it’s wide enough for the length of your spaghetti.
  • If you think of using a stainless steel cookware, remember to use the spatula to flip up the spaghetti so they don’t stick to the bottom.
  • Add more stock or  broth if the sauce dries up and the spaghetti is not fully cooked.
  • Stir at every step to keep the pasta from sticking together using a spoon or tongs. 
  • Don't overcook pasta.

Storage tips:

  • It`s a freezer friendly recipe.
  • Put the pasta in a baking sheet or cupcake mold according to the amount  eaten. Add some cheese, it will be juicy after reheating the pasta.
  • Reheat 5-7 minutes in microwave.
