Ingredients:

  • 4 tablespoons olive oil 

  • 1 large onion 

  • 2-3 cloves garlic 

  • 1 large carrot 

  •  1 large head of broccoli 

  • 4 tablespoon AP flour

  • 2 cups vegetable stock

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • ¼ tsp paprika

  • 2 cups grated Vegan cheddar cheese 


Instructions: 

Step01-Preparing veggies:

  • Cut all your veggies & herbs as per personal choice. For me Onion is finely chopped, minced garlic. 
  • For carrot & broccoli, I prefer finely chopped .If you want a chunky soup then cut your veggies into bite size.

Step02-Cooking:

  • In a large pot put oil. Statue onion for 2-3 minutes to soften. Add minced garlic, saute for minutes. 
  • Add all-purpose flour & whisk continuously to a golden color. 
  • Pour stock, veggies & seasonings. Bring to a boil then reduce heat to medium-low and simmer for 20  minutes or until the broccoli and carrots are cooked properly.
  • Add half cheddar cheese and simmer. Taste and add seasoning if needed. 

 Step03-Serving:

  • Serve immediately with roasted broccoli, bread, cheddar & fresh herbs.

Tips & Tricks: 

  • Adjust veggies as a personal choice. Try to use garden-fresh vegetables. 
  • Be Careful about garlic & all-purpose flour. Because they can raise your soup color & consistency. Don’t worry at all, simply follow my recipe instructions. You will get the best soup ever!! 
  • I am strictly following the vegan rules in this recipe. I am using vegan cheddar cheese. 
  • For a creamy soup boil veggies in stock & cool it down. Blend it. Then put in sauteed onion & garlic. Cook with seasonings. Soup is ready to taste.

Storage Tips:

For leftovers, put them in the fridge for 1-2 days.

Broccoli Cheddar Soup perfect freezer-friendly soup. Store serves soup or one bowl in a container or Ziploc bag.  Traw completely before serving. Warm soup in microwave oven or stove & taste with fresh herbs.
