Basic moist carrot cake

 

This Basic moist carrot cake is the best carrot cake you’ll ever eat; it is moist, tender, sweet, and subtly spiced. The best thing about it is that it is super easy to put together. It is also packed with nutrients and vitamins from carrots and raisins and healthy fats from walnuts, which makes it perfect as a healthier snack or dessert.

Basic moist carrot cake

PREP TIME:40 mins

         COOK TIME:1 hour 15 mins

         TOTAL TIME:1 hour 55 mins 

          SERVES : 8 person

 Ingredients:


For the cake

  • 2 eggs
  • 140 ml vegetable oil
  • 200 g (1 ¼ cup)  brown sugar
  • 180 g (1 ¼ cup) plain flour (all-purpose flour)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • pinch of fine salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon mixed spice
  • 2 teaspoon of apple sauce 
  • 300 g(11 oz) grated carrots
  • 100 g (3.5 oz) raisins
  • 75 g (3.5 oz) pecans or walnuts, chopped (personal choice)

For the icing

  • 275 g Cream cheese
  • 425 g of icing sugar
  • ½ teaspoon of Vanilla extract 

To Decorate

  •  whole marzipan carrots or chopped walnuts

 Instructions:

For the Carrot Cake

  • Preheat the oven to 150°C (300°F).
  • Grease with oil  and line a 24 cm (9.5 inch) springform cake pan.
  • In a large bowl, beat together the eggs, oil and sugar until it is pale and thick.
  • Add all dry ingredients the flour, baking powder, salt, baking soda, ground cinnamon, nutmeg and mixed spice. Mix until well combined.

  • Stir through the carrots, raisins, apple sauce, and nuts (if using). The batter will be  liquid but don’t worry about this.
  • Pour the batter into the cake pan , tap the cake pan to set the batter in mold. Bake for about 1 hour, or until a skewer or toothpick inserted into the middle comes out clean.

  • Leave the cake to cool in the pan for about 5 minutes before removing it to a wire rack to cool down .

To make the icing:

  • In a large bowl beat the unsalted butter and vanilla until completely smooth, then add the room-temperature cream cheese and mix to combine.
  • Gradually add  icing sugar and mix (carefully at first, as otherwise there will be clouds of icing sugar) until smooth and fluffy. 

To Decorate

  • Put the frosting over the cooled cake & spread it using a flat knife or spoon. 

  • As soon as the top of the cake is covered with icing, decorate with some marzipan carrots or chopped walnuts.
  • Leave aside the cake for an hour or so to set before serving.
